South African publishers get a better deal from Google than many of their neighbours, because the local bank transfer is on the menu and it pays out in rand. The catch is that the YouTube side of the same Google account gets a shorter list. I've gone through Google's own help tables so you can see which route applies to you before your first payment is due.
EFT in rand is the headline option
Google's payment-method table lists South Africa for AdSense with EFT marked yes and wire transfer marked yes. Check and Hyperwallet are both marked no. Google's EFT page lists South Africa with the South African rand as the currency, which means the money goes into a local account in local money.
It also says no test deposit is required for South Africa. Many countries have to wait for a small test deposit from Google before the bank account is verified, so skipping that step removes a delay at the start.
Website publishers and YouTubers see different lists
The table above is for AdSense. For AdSense for YouTube, Google's table lists South Africa with EFT yes and wire transfer, check and Hyperwallet all no. So a South African YouTuber has a single route, while a website owner can choose between EFT and wire.

The rand figures you need to reach
Google's thresholds page gives rand amounts: 100 to be able to select a payment method, 1000 before a payment is made, and 100 for the cancelation threshold. Payments are made when outstanding earnings reach the payment figure, as long as there are no holds on the account. Each payments account has to reach it separately.
The verification thresholds don't depend on the currency. Identity verification is 0 dollars, which means you verify before your account can show ads or receive payments. Address verification is still 10 dollars or the local equivalent.
When the EFT arrives
Google finalises estimated earnings on the 3rd of the month. Changes to payment information, including removing a payment hold, need to be completed on or before the 20th, and your balance has to reach the threshold by then. Payments are issued between the 21st and 26th.
After that, Google says an EFT takes up to seven business days. One practical warning from Google's EFT page: if you set EFT as your payment method after the 20th, payment by EFT that month may not go out. Set it up well before the 20th, not on it.
If your balance is below the threshold on the 20th, or you have a payment hold, Google says you won't be paid that month and your balance rolls over to the following month. Nothing is lost, but it does mean a single missed deadline can add a month to the wait.
If you choose wire transfer instead
A website owner can pick wire, but there are trade-offs. Google's wire page says it issues wire payouts in either US dollars or euros depending on your country, and your bank may convert them to rand at its own rate. It also says you can't add a bank account that's not based in your country, that Google doesn't charge you a fee to receive your funds, and that your bank may. A wire can take up to 15 business days.

Since EFT pays in rand, with a shorter wait and no test deposit, many South African publishers will find it the simpler choice. Whichever you pick, ask your bank what it charges on incoming transfers.
The PIN and the tax form
When you hit the verification threshold, Google mails a unique 6-digit PIN by international standard mail, with no tracking number. Delivery typically takes about three weeks, you have 4 months from when it's generated to verify, and entering it wrongly 3 times stops your account showing ads. Use a postal address where ordinary post reaches you.
Google's tax page says not everyone has to provide tax information and that reviews may take up to 7 business days. The IRS page of United States income tax treaties lists South Africa with tax treaty documents, which is relevant if US tax is withheld on any of your earnings. Google can't give tax advice, so ask a South African accountant how it applies.
