I get asked this a lot, usually by someone running a business that has nothing to do with software. Israel's economy isn't only startups. It's also SaaS companies with small support teams, import and distribution firms, dental and aesthetic clinics, law and accounting practices, e-commerce brands selling into Europe and the US, and family-run manufacturing outfits that have been going for decades. There's enough overlap between Israel's working day and the UK and much of Europe for real-time calls most mornings, and I structure the first two weeks around that. Week one is discovery, mapping what actually happens in the business, not what the org chart says happens, plus access to the tools involved. Week two is a working prototype you can test with real conversations, followed by a plan for what gets built well and in what order.
I'll say this plainly: if your business handles fewer than a handful of repetitive customer conversations a day, an AI consultant probably isn't worth it yet.
